Ingredients
- 4 oz dried chipped beef (or deli sliced beef), torn into pieces
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Pinch of cayenne pepper (optional)
- 8 slices white or wheat bread, toasted
Steps
- Tear or roughly chop the dried chipped beef into bite-sized pieces and set aside.
- In a medium saucepan over medium heat, melt the butter completely until it starts to foam slightly.
- Add the flour to the melted butter and whisk constantly for about 1-2 minutes to cook out the raw flour taste. This mixture is called a roux.
- Slowly pour in the milk a little at a time, whisking continuously to prevent lumps from forming.
- Continue whisking and cooking over medium heat for about 5-7 minutes until the sauce thickens enough to coat the back of a spoon.
- Add the black pepper, garlic powder, and cayenne if using. Taste and adjust seasoning as needed. Note: chipped beef is already salty, so hold off on adding extra salt until you taste it.
- Stir in the chipped beef pieces and reduce heat to low. Let it simmer for 2-3 minutes so the beef warms through and the flavors meld together.
- Toast your bread slices to your preferred level of crispiness.
- Place two slices of toast on each plate and ladle a generous amount of the creamed beef mixture over the top. Serve immediately.
Becky's Tip:
If your gravy gets too thick, simply whisk in a splash of milk to loosen it up. For extra flavor, try adding a dash of Worcestershire sauce to the gravy.
